Project description
The aim of the project is the development of viticultural and enological techniques that will produce optimum quality Chenin blanc wines and that will enhance the shelf-life of wine. Preliminary trials concerning viticultural aspects (sunlight exposure, shade, berry size and ripening stage) and enological aspects (yeast strain, lees contact and shelf-life) were conducted during the 2001 season. Guidelines for future trials will be determined by the outcome of these preliminary trials. Wines were not ready for gas chromatographic analyses and sensory evaluation during report.
